Banana Cupcakes with Raisins and Spices

Don't you love the sweet smell of fresh baked goods coming right out of the oven? But not everyone has time to bake and some people even have the assumption that baking is hard and requires a lot of skills. 
On my blog, I post easy baking recipes. 
Recipes for cupcakes, cakes and salty foods that don't require much time and are easy to produce. Recipes that are loved and ordered by all Cook N' Bake customers.
Quick and easy are two words I am very attached to in order to finish the numerous skills I have to do per day and still manage to satisfy the hungry tummies I live with.
Cupcakes are very easy. Their recipe could be applied on a cake, the only difference is the baking time required. So if you want to turn these lovely cupcakes into a cake make sure to choose a small baking pan around 10 cm the diameter and give it around 30 minutes in the oven.
Quick baking tips before heading to the recipe:

1- Never ever open the oven before three quarters  of the required baking time has elapsed
2- Besides the famous "clean toothpick" trick, give the top of the cake a small push with your finger, if it goes right back up then your cake is done.
3- In baking, whether it was bread, cake or cupcakes, it is crucial to stick to the measurements listed. Understand that creating a cake recipe falls under the rules of chemical equations. Every ingredient is important and contributes evenly in the success of the final product.

Cooking time: 20 minutes
Makes 12

Ingredients

125g (4 oz) unsalted butter
½ cup (125g/ 4 oz) caster sugar
2 free- range eggs
1 teaspoon vanilla essence
3 ripe medium bananas, mashed
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
½ cup (125 ml/ 4 fl oz) milk
2 cups (250 g /8 oz) flour
¼ teaspoon grounded nutmeg
¼ teaspoon cinnamon
½ cup raisins 


1. Preheat the oven to hot 200C(395F⁰). Line a regular cupcake tin with baking cupcake sheets.
2. Cream the butter and sugar in a small bowl with electrical beaters until light and fluffy. Gradually, blend in the eggs, beating well after each addition.
Combine the mashed banana and vanilla. Keep blending for 2 minutes, scraping the bowl occasionally
3.Pour the milk while beating on medium speed.
4. Gradually, spoon the flour, soda and baking powder. Keep mixing until the batter is well combined for about 1 minute.
5. Using a medium ice cream scooper, fill three-quarters of each cupcake hole. Sprinkle the top with raisins.
6. Bake for 15 minutes on 180
C (350⁰F). Reduce the heat to 150C (300⁰F)and bake for an additional 5 minutes or until a tooth pick comes out clean when inserted in the center of the cupcake.
7. Leave the cupcakes for 10 minutes before transferring them onto a wire rack to cool completely.
