Homemade chocolate chip sablé

Good morning lovely followers! You might be wondering why I named these chocolate chip cookies sablé instead of cookies. Well you have the right to wonder. Let me tell you a quick story about cookies.
What is the basic ingredient in a cookie? 
Do you know the answer?
Well right, BUTTER... or FAT in general
It helps give it its desired crunch and texture. But along with the fat you choose to use, any added ingredients in its required proportion will play the main role in giving your cookies its identity. Either crucnhy, moist, chewy, etc.

I have many many chocolate chip recipes. The one you will learn today is the exact sablé recipe with added chips in it. It has a crunch, it is lite and you will hate me for it cause you won't be able to stop eating.

Preparation time: 50 minutes
Baking time: 20 minutes
Makes 1 kg


Ingredients

600 g all- purpose flour
400 g unsalted butter at room temperature
200 g Confectioner's sugar
1 whole egg at room temperature
1 teaspoon vanilla extract or 1/2 teaspoon vanilla extract powder
1 cup dark or semi-sweet  Hersheys chocolate chips

Preparation:
  1. Preheat the oven to medium 180 ℃ (356 ℉). Line a baking sheet with parchment papers.
  2. Using the paddle attachment of a stand mixer, mix both butter and sugar on a medium-high speed until creamy and white.
  3. Add the egg and vanilla.
  4. Lower the mixer's speed on medium, and add the flour gradually.
  5. Using a plastic spoon, scrape the edges and the bottom of the mixer bowl, making sure all ingredients are well mixed together.
  6. Add the chocolate chips and beat for 10 seconds only.
  7. Transfer the dough into a palstic sheet, cover well and refrigerate for 20 minutes.
  8. Using the palm of your hands, make small balls, about 3 cms wide.
  9. Place them on the baking sheet and gently press them with your finger to make them a little flat. Make sure not to press too hard.
  10. Place the baking sheet on the top third of the oven and bake for 15 to 20 minutes.
  11. Transfer the cookies onto a cooling tray and while you wait to dig in prepare a pot of coffee or squeeze some oranges or a fresh lemonade.
