Tuna Pasta Salad

Both my kids are pasta addicts. They like it in salads, in the oven with sauce or plain.
Personally I like colorful dishes. A course that has all the nutrients they need, but I have picky eaters and not all vegetables are acceptable for their little tummies. Here, in this recipe, I gathered most of the vegetables they enjoy and I made a dressing that is both delicious and healthier than the regular lemon mayo.

Preparation time: 20 minutes
Cooking time: 10 minutes

Ingredients

5 cups Fusilli, boiled, drained and cooled
3 large carrots, finely grated
5 Lebanese cucumbers sliced into half moons
3 cups whole Cherry tomatoes
4 cups white cabbage finely chopped
2 cans of Tuna, drained
1 can of sweet corn, drained

For the dressing:

1/2 cup and 2 tbsps light Mayo
4 tsps white vinegar
4 tsps lemon juice
1/4 tsp black pepper
1/2 tsp salt


This salad is a very rich meal full of nutrients. Let's review the importance and richness of each ingredient I used.

  • The cabbage is very rich in Vitamin K, Vitamin C, Manganese and Folate.
  • Carrots are rich in Beta carotene and Vitamin A
  • Cucumbers are a good source of potassium and fiber
  • Tomatoes are an important source of Lycopene ( antioxidant); they are also rich in Vitamin C, Potassium, Folate and Vitamin K.
  • As for the corn, besides containing carbohydrates they are a very good source of fiber, and rich in Vitamin C and Magnesium
  • Tuna is a very good source of Omega-3, protein, Vitamin D and Selenium.
  • As for the mayo, there is no doubt that mayo is full with fat but it also contains a good amount of Vitamin E and K. Besides, Mayo may encourage some kids to dig into a bowl of raw vegetables.
